This berry oatmeal bake is super sweet from the berries and packs a crunch from the walnuts. This recipe is vegan, plant-based, gluten-free and of course oil-free like every other recipe on The Vegan Afterglow.

Plus, it’s super easy to make with very little clean up. You only need 1 mixing bowl and a casserole dish. Mix it all together, throw it in the oven, and you’ve got a lovely warm and sweet berry breakfast for the next 4 days.

This recipe is also a great meal prep option for the week too! You can easily bake this once, and reheat in the oven throughout the week. You can reheat this berry oatmeal bake in the microwave, but I personally think it tastes better when you reheat your meals the same way you cooked them.

Berry Oatmeal Breakfast Bake (Vegan + Oil-Free)

If you want a healthy, warm and filling breakfast to start your day, then this is the recipe for you. This berry oatmeal breakfast bake is super sweet from the berries and packs a crunch from the walnuts. This recipe is vegan, plant-based, gluten-free and of course oil-free!

Ingredients

  • 1 flax egg (1 tablespoon ground flaxseed + 3 tablespoons water)
  • 1 2/3 cups unsweetened non-dairy milk (400ml)
  • 6 soft dates (if your dates are hard then soak in water first for 10 mins)
  • 2 teaspoons vanilla extract
  • 1 teaspoon baking powder
  • 2 teaspoon cinnamon
  • 2 cups rolled oats
  • 1/2 cup walnuts
  • 1 1/2 cups berries

Instructions

  1. First start by making the flax egg in a mug. Leave to stand for at least 10 minutes to make your “egg”.
  2. Pre-heat your oven to 375°F / 190°C and line an 8×8 casserole dish with reusable parchment paper.
  3. In a blender, add the dates and milk and blend.
  4. In a mixing bowl, add your blended dates and milk, along with the vanilla extract, baking powder + cinnamon. Mix until fully combined.
  5. Lastly, stir the rest of your ingredients, oats, walnuts, berries, and your flax egg into the mixing bowl. Reserve a few berries and walnuts for your topping.
  6. Transfer your oat and berry mixture onto the parchment paper in the 8×8 casserole dish.
  7. Bake in the oven at 375°F / 190°C for around 30 minutes.
  8. Let your Berry Oatmeal Breakfast Bake cool before you serve or place in the fridge/freezer for meal prep.
