These are the best damn nachos I’ve ever tasted – seriously! And I’ve ate a lot of nachos in my 24 years of living – vegan & non vegan.
Normally when I make nachos I use soya mince and supermarket fake cheese, but lately I’m trying to eat less processed food and more healthy whole food. So I decided to make these nachos with a homemade cheese sauce & black beans instead. And needless to say, they were banging!

I usually make a big batch of the cheese sauce at the start of the week which costs about £0.50 to make and only takes around 30 minutes of your time. I love it because it’s so versatile & it only takes a few minutes to heat up. I mostly use it for nachos & mac & cheese and it lasts me the whole week – which is brill for lazy vegans like me!
I think the best way to cook nachos is to make sure the nachos are crispy, load it with yummy toppings & smother it with sauces. Trust me – it’s filling, it’s tasty & it’s actually kinda healthy! And vegans are just supposed to eat grass ey?
Vegan Nachos Recipe
This recipe works out at around £1.13 per serving
- 1 bag tortilla chips - £0.46
- 1 medium red onion - £0.20
- 2 chillies - £0.30 (£0.60 for packet of 4)
- 1 tin black beans - £0.50
- 1/2 cup guacamole - £0.30 (4 avocados for £1)
- 1 cup cheese sauce -£0.10 (around £0.40 for a whole batch which serves 8 servings)
- 1/2 cup salsa - £0.40 (£0.80 for 1 tub)
Heat up tortilla chips in oven.
While the tortilla chips are turning nice & crispy in the oven, mash together the ingredients for the homemade guacamole (avocado, lemon juice, chilli powder & salt).
Boil black beans in a pot for 4 minutes.
Cut up the red onion & the chillies.
Heat up the cheese sauce (instructions to make a big batch of cheese sauce below).
Take tortilla chips out of the oven & top with black beans, chillies, onion, cheese sauce, guacamole & salsa.
Vegan Cheese Sauce Recipe
This recipe works out at around £0.08 per serving
- 1 cup potatoes - £0.10 (£1 for a bag)
- 1 cup carrots - £0.10 (£0.44 for a bag)
- 1 cup plant-based milk - £0.15
- 1/4 cup nutritional yeast flakes - £0.05
- 1/4 cup tahini - £0.10
- 2 tbsp lemon juice
- 1/2 tsp onion powder
- 1/2 tsp garlic powder
- pinch salt
Peel & cut potatoes and carrots.
Drain & add potatoes & carrots to blender.
Blend in your blender until smooth. Slowly adding the milk depending on how thick you'd like your sauce.
Store cheese sauce in an air tight container & keep refrigerated for up to 7 days.
