Creamy Cajun Pasta With Vegan Chorizo Sausage

This one is for all the pasta lovers out there! This spicy vegan sausage pasta is such a quick yet satisfying dish. Made with a creamy cashew sauce with a Cajun kick and Chorizo vegan sausages, this is the perfect recipe to quickly whip up on a weeknight! 7 simple ingredients and 15 minutes is all you need to create this incredible vegan pasta dish!


  • 1 medium red onion
  • 3 cups whole grain pasta
  • 6 vegan Chorizo style sausages

Cajun Cashew Sauce

  • 1 cup cashews (soaked in boiling water for 10 mins)
  • 2 cups water
  • 3 tbsp nutritional yeast
  • 1 tbsp lemon juice
  • 1 tbsp cajun seasoning
  • Pinch of salt + black pepper


  1. Before you begin cooking, add 1 cup of cashews to a small bowl or mug and cover with boiling water. This will make sure your cashews are nice and soft for making your Cajun cashew sauce.
  2. Start by cooking your pasta in a pan of boiling water for around 10-15 minutes.
  3. Cook your sausages depending on the instructions on the back. I cooked mine in the oven for around 15 minutes until they started to get slightly crispy.
  4. While your pasta and sausages are cooking, you can quickly whip up the easy Cajun cashew sauce. Add all your ingredients to a blender and blend until smooth – simple!
  5. Chop up 1 medium red onion and add to a large stir fry pan with a splash of water. Water-saute your red onion for a few minutes until it starts to soften.
  6. Once your pasta and sausages are cooked, chop up your sausages and add them to the pan with the red onion along with your pasta and Cajun cashew sauce. Stir until everything is combined and warm.
  7. Serve immediately or store in a meal prep container!


  • If you don’t have “cajun seasoning” then use a mixture of paprika, garlic powder, onion powder, oregano, cayenne pepper, thyme + black pepper.
  • You can also add spinach to this dish for extra greens!
