Creamy Cashew Vegan Mac + Cheese (Oil-Free + Healthy)

Last week I was craaaaving mac + cheese, and although normally I make my vegan cheese sauce with vegetables, I wanted to try out a cashew nut base for a change. I have to admit, I’d already demolished half of this recipe in a few minutes after I’d made it… I just can’t resist a healthy mac + cheese recipe. Cashews aren’t normally on my shopping list because nuts can be quite expensive for small amounts. But I wanted to make an effort to sneak more nuts into my meals because of…

Strawberry & Apricot Vegan Smoothie

I have been craving strawberries for what feels like soooo long. I think my body is getting sick of the winter weather and it’s starting to miss the currently out of season fruits (like all the yummy fresh berries that are currently £2 per packet… what!?) Which is why you make “nicecream” with frozen bananas and not fresh ones….

Chewy Vegan Cinnamon Rolls

Before I made these, I thought making cinnamon rolls from scratch was complicated and time consuming, and to be honest I didn’t think they would be worth it. But damn was I wrong! These are the best cinnamon rolls I’ve ever had! They’re chewy, sticky & easy to make. I’ve seen other cinnamon roll recipes with a long list of ingredients & unnecessary steps like using string of floss to cut the cinnamon rolls (a bread knife works just fine). For those of us on a budget, I wanted to keep the ingredients minimal and the process simple. I’ve made these cinnamon rolls a few times now (the first time I used baking soda instead of yeast – they were…
