I love this buffalo jackfruit stuffed sweet potato recipe because its so simple to make and it tastes amazing! It takes around 10-15 minutes to make and is made with only healthy whole-food & plant-based ingredients. I have been craving strawberries for what feels like soooo long. I think my body is getting sick of the winter weather and it’s starting to miss the currently out of season fruits (like all the yummy fresh berries that are currently £2 per packet… what!?)
