These coconut cashew bliss balls are the perfect, guilt free snack to graze on throughout the day! Made with 7 ingredients and taking around 10 minutes to make, they are a brilliant meal prep snack to keep in the fridge!
These yummy bliss balls are made with Medjool dates – a natural sugar with a lot of health benefits. Medjool dates are full of fibre, antioxidants with anti-inflammatory benefits, vitamins + minerals. Which means they are the perfect healthy sweetener!
THESE BLISS BALLS ARE:
- Dairy free
- Refined sugar-free
- No bake
- Easy to make
- 8 medjool dates (pitted)
- 1/4 cup cashews or cashew butter
- 3-4 tbsp plant-based milk (I used Alpro Soya Light)
- 2 tbsp rolled oats
- 1/4 cup coconut flour
- 1 tsp vanilla extract
- 1/4 cup desiccated coconut (For topping)
Mix all ingredients in a food processor until mixture becomes slightly sticky, but dry enough to roll into balls.
Roll into balls -you should be able to make 12 balls with this mixture.
Add desiccated coconut to a bowl and roll each ball into the desiccated coconut mixture until covered.
Put all balls into a glass tupperware and leave to chill in the fridge - but you can eat these straight away!
