  • 8 medjool dates (pitted)
  • 1/4 cup  cashews or cashew butter
  • 3-4 tbsp plant-based milk (I used Alpro Soya Light)
  • 2 tbsp rolled oats
  • 1/4 cup coconut flour
  • 1 tsp vanilla extract
  • 1/4 cup  desiccated coconut (For topping)
  1. Mix all ingredients in a food processor until mixture becomes slightly sticky, but dry enough to roll into balls.

  2. Roll into balls -you should be able to make 12 balls with this mixture.

  3. Add desiccated coconut to a bowl and roll each ball into the desiccated coconut mixture until covered.

  4. Put all balls into a glass tupperware and leave to chill in the fridge - but you can eat these straight away!
