Coconut Cashew Bliss Balls

These coconut cashew bliss balls are the perfect, guilt free snack to graze on throughout the day! Made with 7 ingredients and taking around 10 minutes to make, they are a brilliant meal prep snack to keep in the fridge!

Ingredients

  • 8 medjool dates (pitted)
  • 1/4 cup cashews or cashew butter
  • 3-4 tbsp plant-based milk
  • 2 tbsp rolled oats
  • 1/4 cup coconut flour
  • 1 tsp vanilla extract
  • 1/4 cup desiccated coconut (for the topping)

Instructions

  1. Mix all ingredients in a food processor until mixture becomes slightly sticky, but dry enough to roll into balls.
  2. Roll into balls – you should be able to make 12 balls with this mixture.
  3. Add desiccated coconut to a small bowl and roll each ball into the desiccated coconut mixture until covered.
  4. Put all balls into a glass tupperware and leave to chill in the fridge – but you can eat these straight away too!
