INGREDIENTS:

Vegan Eggless Omelette

1 cup (200ml water) – ½ cup besan flour – ¼ tbsp black salt (kala namak) – Pinch of Himalayan salt

Toppings of your choice – I used spinach & mushrooms

 

Hash Brown Pancakes

1 whole potato – Firm tofu – ½ tbsp black salt – ¼ tbsp turmeric – Dash of light soy sauce (for the mushrooms) – Dash of liquid smoke (for the mushrooms)

Toppings of your choice – I used spinach & mushrooms

 

Avocado & Marmite On Toast

2 pieces of toast – 1 medium avocado – Marmite (use as much or little as you like) – Sesame seeds – Himalayan salt & black pepper

 

Vegan Fried Egg/Eggs & Soldiers

“Egg White”: ¼ cup rice flour – ¼ cup plant-based milk of your choice – 1 tbsp water

“Yolk”: 2 sweet potatoes – Himalayan salt & black pepper – ½ tbsp black salt – 1 tbsp nutritional yeast – 2 tbsp corn starch – 2 tbsp olive oil – 1 tbsp water

Serve with wholegrain toast
