These cookies are chewy and gooey on the inside, with a little chocolate on top. And believe it or not, but these cookies are actually healthy for you – made with only 4 main ingredients!

These chewy cookies seriously are one of the best no-bake raw desserts I’ve ever made! And it makes it so much better knowing that they’re healthy too! They’re around 170 calories per cookie, and made with healthy ingredients like tahini, dates + almond flour.

This is a simple recipe with simple ingredients with such an amazing result in 5 minutes! I chose to add a tiny amount of dark chocolate on top, but because these cookies come out so chewy and soft, you can add whatever toppings you like and just push them on top on the cookies to stay in place. Some topping options could be desiccated coconut, pecans, walnuts, hazelnuts… ect.

These chewy cookies taste like salted caramel because of the gooey dates, with a slight nutty taste from to the almond flour. Basically they’re a really great low calorie snack for when you need a little sweetness in your life! I also tested these yummy cookies on my non-vegan boyfriend who tried them and said they tasted kind of like a snickers bar, yay!

What do I need to make these yummy cookies?

  • A food processor. It doesn’t have to be an expensive food processor, they all do the same job!
  • Reusable baking paper. This is optional but highly recommended because it’s super handy when making recipes like this! It’s also great for oil-free cooking too.
  • Sugar free vanilla drops. Again, optional but great if you’re watching your sugar intake! These sugar free vanilla drops taste amazing and you can add them to everything – even your morning oats to give them a sweeter taste!

5 Minute No-Bake Chewy Cookies

Ingredients

  • 1 cup almond flour
  • 1/3 cup creamy tahini
  • 5 drops of sugar free vanilla extract (or alternatively use 1 tsp vanilla extract)
  • 8 medium size dates (if your date aren’t squishy and soft then soak in boiling water for 5 mins)
  • 2 tbsp unsweetened plant milk (soya/almond/cashew)
  • 2 cubes of vegan dark chocolate (optional)

Instructions

  1. If you’re using dates that aren’t very squishy and soft then you’ll need to soak your dates in boiling water for 5 minutes to soften them slightly. For this recipe I recommend using soft dates for a nice chewy cookie, but boiling hard dates will work just as good.
  2. Add all your ingredients to a food processor – almond flour, tahini, vanilla extract, dates + plant milk.
  3. Process the ingredients for around 1 minute until it forms a slightly wet dough consistency. You can test it’s the right consistency by taking a small portion and rolling it into a ball – if it crumbles apart then you’ll need to add a small amount of plant milk until you can roll it into a ball easily.
  4. Take a small amount of the mixture (about 2 tbsp) and roll into a ball. Then with the palm of your hand, press the ball down to make a round cookie shape.
  5. Put 2 cubes of vegan dark chocolate in a small bowl and melt in the microwave for 30 seconds. Make sure you mix it around after the 30 seconds. It’s very easy to burn!
  6. Use a teaspoon to add the chocolate on top of the cookies. 2 cubes of chocolate doesn’t sound like a lot but it does cover all of them enough. You can use more if you want them more chocolatey, but they honestly taste amazing as they are!
  7. Place your cookies on a baking tray with the baking paper. Add them to the fridge for 30 minutes to set.
  8. Store your cookies in a air-tight container and eat within 7 days. And more importantly, enjoy your chewy cookies – it’s hard not to eat them all in one go!
