STEP BY STEP INSTRUCTIONS:

STEP 1. Make the sauce by adding all sauce ingredients into a large wok.

STEP 2. Add your vegetables to the wok, along with your tofu, and cook on a medium heat for around 10 minutes. Make sure you give it a stir so that the sauce fully coats your ingredients.

STEP 3. Add your straight to wok noodles and cashews and cook for a further 2 minutes. Top with spring onions and more sesame seeds and serve!

HOW TO MAKE TOFU ACTUALLY TASTE GOOD:

Step 1. Freeze it, defrost it, freeze it again and let it defrost. This creates a more meaty texture to the tofu.

Step 2. Press the tofu. You can do this with a tofu press or use kitchen roll and put something heavy on top of the tofu. You need to press your tofu to get rid of all the water inside so don’t skip this step! It only takes a few minutes.

Step 3. Marinade it! Tofu can literally taste like anything you want it to because it soaks in all the flavours.

Step 4. Coat it. You can use regular breadcrumbs, panko breadcrumbs or even nutritional yeast to coat your tofu. This adds a crunchy texture to the outside of the tofu. Although this isn’t necessary, if you want that crispy chicken texture, then you definitely need to try this!

Step 5. Oven bake on a silicone matt to give your tofu some crunch! By using a silicone matt, your tofu wont stick on the baking tray and it will cook a lot nicer because your coating wont peel off when you need to turn your tofu around.

Ingredients

Sticky Sesame Sauce

  • 1/2 cup vegan low sodium vegetable stock
  • 1 tbsp corn starch + 1 tbsp water
  • 1 tbsp sriracha or other chilli sauce
  • 1 tbsp low sodium soy sauce
  • 1 tbsp molasses
  • 1 tbsp rice vinegar
  • 1/2 inch fresh ginger
  • 1 tbsp garlic puree
  • 1 tbsp chilli flakes (optional)
  • 1 tbsp sesame seeds

Additions

  • 1 packet (150g) straight to wok noodles (egg free)
  • 1 cup mushrooms
  • 1 cup broccoli
  • 1 cup tofu
  • 1/4 cup cashews

Garnish

  • Spring onions

Instructions

  1. Using a teaspoon, "peel" your ginger and grate.
  2. Cut your vegetables into bite sizes pieces. For this recipe I used mushrooms and broccoli, but you can use any vegetables.
  3. Add all your "sauce" ingredients into a wok and mix for a few minutes until full combined. If you don't want your sauce too spicy then omit the chilli flakes.
  4. Add your tofu, mushrooms and broccoli to the wok and cook on a medium heat for around 10 minutes until your mushrooms, broccoli and tofu are cooked.
  5. Empty your packet of noodles into your wok along with your cashews and heat for a further 2 minutes.
  6. Garnish with spring onions + store your sticky sesame tofu noodles in a glass air tight container and eat within 5 days.
