Creamy Cashew Healthy Vegan Mac + Cheese (Oil-Free)

  • 1 cup cashews
  • 1 cup water add a low sodium stock cube for extra flavour
  • 1/2 white onion
  • 3 garlic cloves
  • 3 tbsp nutritional yeast
  • 2 tbsp lemon juice
  • 1/2 tbsp oregano
  • 1/2 tbsp paprika
  • 1 pinch himalayan salt (or black salt)
  • 1 pinch black pepper


  1. Start by boiling the kettle ready to cook your pasta + soak your cashews.

  2. While the pasta is cooking, soak the cashews in boiling water for 5 minutes,

  3. Add the cashews + the rest of the ingredients to a blender. I used my Breville blender, so you don't need an expensive blender for this recipe to work.

  4. Mix the cashew cheese sauce with the pasta. After this you can serve immediately or you can top with panko bread crumbs + bake the in the oven for 10 mins. Both taste amazing!

Recipe Notes

Feel free to use whatever seasoning you want, I added a tad garam masala, but add as much/little seasoning as you like.

And if you are saving this recipe for the next day, then add a few drops of milk to make the sauce creamy again!
